1-2 cups shredded chicken
6 c. Chicken stock
1lb green chiles or 16oz can of roasted green chiles
3 roasted Roma tomatoes
1 onion diced
6 cloves garlic (I love garlic) diced
1 bunch cilantro
1 Tbsp kosher salt
(Add a couple jalapeños for spice)
In a large stock pot sauté onions, garlic & 8oz green chiles.
Dry roast tomatoes and blend together with the rest of green chiles and cilantro.
Combine all of the above and simmer.
Add chicken broth and shredded chicken.
Garnish with crispy tortilla strips, queso fresco and avocado!
